Understanding Cognac Aging: XO

XO is the designation for cognacs that are aged for at least 10 years, although many XO cognacs will contain some eau-de-vie aged much longer. The longer aging process imparts a deep richness, developing complex flavors that can range from dried fruits and honey to spices, leather, and tobacco.

Here we go! From VS, VSOP to XO. Lets kiss some glass.

XO (Extra Old): Luxury in a Glass

- Minimum Age: 10 years

- What It Means: XO is the designation for cognacs that are aged for at least 10 years, although many XO cognacs will contain some eau-de-vie aged much longer. The longer aging process imparts a deep richness, developing complex flavors that can range from dried fruits and honey to spices, leather, and tobacco. XO cognacs are typically more refined and elegant, with a smoother texture and longer finish.

  - Hennessy XO: A luxurious and iconic XO, Hennessy’s offering is rich with layers of flavor, including dark chocolate, candied fruits, and spices, all enveloped in a smooth, velvety finish.

  - Martell XO: Known for its floral and fruity notes, it’s more delicate and complex compared to some of the heavier XO options, offering a delightful balance of sweetness and spice.

XO cognacs are considered best for sipping neat, as the long aging process allows them to reach their full potential of flavor and smoothness. Some people even pair them with fine cigars for the ultimate tasting experience.

Hence for the XO, we wont be sharing any cocktails because we believe that will rob you of the experience, instead lets pair it with some cigars.

3. Cognac XO Cigar Pairings

 Medium-Full to Full-Bodied.

Cognac XO (aged at least 10 years) delivers complex layers of dried fruits, dark chocolate, spices, and rich oak. A more robust cigar can stand shoulder-to-shoulder with these bold, mature flavors, creating a luxurious pairing.

 Recommended Cigars:

1. Padron 1926 Series (Nicaragua)

   - Profile: Full-bodied and complex, with notes of cocoa, coffee, nuts, and a smooth sweetness.

   - Reasoning: The rich, roasted flavors of the Padron 1926 complement XO’s deeper notes of dark fruit, oak, and spice, resulting in a well-rounded, indulgent experience.

 2. Davidoff Winston Churchill “Late Hour” (Dominican Republic/Nicaragua blend)

   - Profile: Medium-full, featuring rich earth, leather, and dark chocolate, with a hint of sweetness from the tobacco aged in Scotch single malt barrels.

   - Reasoning: This cigar’s nuanced, barrel-aged character pairs beautifully with an XO’s depth, highlighting the cigar’s robust earthiness and the cognac’s warm spice and dried fruit notes.

 3. Partagás Serie D No. 4 (Cuba)

   - Profile: Medium to full-bodied, offering peppery spice, cedar, and a creamy finish.

   - Reasoning: A classic Cuban robusto that has enough complexity and richness to match the layered flavors of an XO Cognac. The cigar’s savory and spicy elements complement the spirit’s aged oak and dried fruit character.

By carefully selecting a cigar that complements each cognac’s aging profile—VS, VSOP, or XO—you can create an immersive tasting experience that highlights the best qualities of both. Remember to pace yourself. Cheers and happy pairing!
